1 ½ cups graham cracker crumbs

3 Tbsp melted butter

2 Tbsp granulated sugar

16 oz (2 packages) cream cheese, softened

¾ cup granulated sugar

2 large eggs

1 cup pure pumpkin purée

½ tsp vanilla extract

½ tsp ground cinnamon

⅛ tsp ground nutmeg

Pinch of salt

Whipped cream and toasted pecans for serving (optional)
Directions

Pre-heat oven to 325 °F (160 °C).

In a bowl, mix graham cracker crumbs + melted butter + 2 Tbsp sugar; press into the bottom of a 9-inch springform pan to form crust.

In a large bowl, beat cream cheese until smooth. Add ¾ cup sugar, eggs (one at a time), pumpkin purée, vanilla, cinnamon, nutmeg and salt — mix until combined.

Pour filling over the crust, smooth the top.

Bake for ~50-60 minutes, until the edges are set but the centre still slightly wobbly. Turn off oven, leave cheesecake inside with the door cracked open for 1 hour to avoid cracks. Then refrigerate at least 4 hours (preferably overnight).

When ready to serve, top with whipped cream and toasted pecans for texture and extra flavour.
