Refreshing Raspberry Royale

If you’re looking for a refreshing cocktail that will help you beat this summertime heat, then look no further! This summertime raspberry royale will do the trick. This cocktail is super simple to make and it will look fabulous in any piece of glass from the Simon Pearce collection. This particular image features the Simon Pearce Barre champagne flutes and the Barre small pitcher.


Refreshing Raspberry Royale

Serves 6


1 6oz container of fresh raspberries

1 bottle of prosecco

6 tablespoons of raspberry liqueur


1. Mix 18 of the raspberries with 2 tablespoons of the raspberry liqueur and freeze. Puree the remaining raspberries with 1/4 cup of the raspberry liqueur in a blender. Strain the puree to remove and remaining seeds.  When ready to serve, spoon 1/6 of the mixture into champagne flutes. Fill the glass with prosecco, then top with 3 of the frozen raspberries and enjoy!
