Chorizo Stuffed Mushrooms


(Makes about 30 mushrooms)
– 1 pound of mushroom caps de-stemmed
– 1/2 stick butter, melted
– 1/4 cup of sherry
– 8 oz fresh chorizo (if in casings, cut out of casings)
– 4 oz bread crumbs
– 4 oz grated Manchego (or other sharp hard cheese)
– 2 oz chopped parsley

1. Toss mushroom caps in bowl with melted butter & sherry to coat.
2. In separate bowl mix other ingredients.
3. Stuff sausage mixture into mushroom caps and arrange in a
shallow baking dish.
4. Bake at 350 degrees for 30 minutes.
